Product Details
Rainbow Beet Mix II seeds are a vibrant, premium blend of five heirloom beet varieties that delivers substantial visual and culinary impact — think globe-shaped roots in deep red, candy-striped pink-and-white, golden yellow, crisp white, and rich purple, all bursting with a mild, sweet, earthy flavor that works beautifully raw, roasted, pickled, or sautéed. The mix is especially versatile: harvest the roots small and tender for bright, fresh salads, or let them mature to enjoy their full-bodied color and sweetness, while the stems and greens are also edible and add a pop of variety to microgreen mixes or steamed greens. With a relatively fast maturity (around ~55 days per sources from Ball Seed) , this blend combines aesthetic flair and steadiness in the field — ideal for specialty growers, boutique market stands, and chefs who want a “wow” factor that’s more than just decorative. The diversity of root colors means every harvest is a surprise, and the consistent performance in both home and commercial settings makes it a high-value pick for anyone serious about both flavor and presentation.
